Grapes for our Pinot Grigio were chosen from across California’s best cool climate growing regions, known for producing excellent acidity and balanced flavors, primarily from the North Coast. This area is known for maritime-influenced warm days and cool nights, with extended hang time for the grapes resulting in ripe flavors while preserving crispness and delicacy. Extended hang time also allows for mature, ripe fruit with balanced acidity and well-developed flavors.
We carefully picked the grapes during the cool night and early morning hours in hopes to strengthen the citrus flavors and acidity balance. Once at the winery, the grapes were de-stemmed and gently pressed. The fresh juice was fermented in temperature controlled stainless steel tanks, which preserve and enhance the fruit and floral flavors of this Pinot Grigio. We hand-craft our Pinot Grigio in our signature “Twirl-ing” style, making this wine consistent, smooth, balanced, and perfect for any occasion.
