The Rías Baixas D O (Denomination of Origin) extends through areas of Galicia, located in northwest Spain, which has a number of common conditions, which influence the characteristics of its wines: (1) They are lowlands, with altitude generally less than 300 meters to sea level; (2) They can be along the lower reaches of the river courses, near the sea, and (3) Its climate is “Atlantic”, with mild temperatures and high rainfall, but less in summer. This location causes the soils to be mainly sandy and mineral laden, especially granitic, and the acidity gives touches of salinity to the wines. Harvest starts in early September, and grapes are carefully picked, de-stemmed, and then pneumatically pressed.
