Climate defines Bellori wines. In Rueda DO, there is very low rainfall, hot dry summers and long winters, with the risk of late frosts in spring and early fall, and a temperature fluctuations between day and night of over 20 degrees during the ripening period. The sandy, stony soil of Spain produces low yields of high quality Verdejo grapes. Then the grapes are hand-picked to insure that only perfect grape clusters are used. Alcoholic fermentation occurs at a carefully control temperature of less than 20ºC for 10 days. Then the Verdejo is aged for 4 months with their own lees to improve aromas.
