About this wine

2021 年份的聖方濟卡本內蘇維濃所用的葡萄,來自我們位於索諾瑪谷與俄羅斯河谷的自有葡萄園,並結合來自索諾瑪郡其他頂級產區(包括 Dry Creek Valley 與 Alexander Valley)傑出葡萄農所種植的果實。該年生長季節降雨量有限,產量略低,卻帶來風味與色澤極為濃縮集中的葡萄。夏季氣候穩定,沒有持續的熱浪,有助於維持葡萄的酸度,使酒款更顯明亮且平衡。採收期一直延續到十月中旬,最後一批紅葡萄才完成採收。所有葡萄在去梗後,先經過兩天低溫浸漬,以萃取最佳的色澤與風味。葡萄分批進行發酵,讓每一批酒液都能依其特色獨立釀製。完成發酵後,酒液進入法國橡木桶中熟成,其中 20% 為新桶。整體陳年時間長達 15 個月,之後才進行最後的調配與裝瓶。

The fruit for the 2021 St. Francis Cabernet Sauvignon is sourced from our estate vineyards in the Sonoma and Russian River Valleys, as well as from exceptional growers in Sonoma County’s other premier appellations, including Dry Creek Valley and Alexander Valley. Limited rainfall during the growing season produced slightly lighter crops but brought intense, concentrated flavor & color. Free from lingering heat waves, the consistent weather during the summer months helped maintain fruit acidity for brightness and balance. Harvest continued through the middle of October when the last of the reds were picked. All grapes are gently de-stemmed before cold-soaking for two days to extract optimal color and flavor. The fruit is fermented in separate lots, allowing each lot to be individually and distinctly crafted before being aged in French oak barrels, 20% new. The wines are kept for 15 months in barrels before final blending.
