這款 Pinot Noir(黑皮諾)所使用的葡萄,來自索諾瑪郡較涼爽地區的葡萄園,包括俄羅斯河谷(Russian River Valley)與貝內特谷(Bennett Valley)。這些地區受太平洋與聖巴勞灣(San Pablo Bay)的海洋氣候影響,夏季夜間有涼風、霧氣與氣流進入,大幅降低氣溫,形成天然的冷卻環境。這樣的條件極為適合種植 Pinot Noir,使葡萄能在保有酸度的同時發展出深層風味。為了完整呈現各葡萄園獨特的品種特性,我們將各批葡萄分開釀造,首先進行為期 5 到 10 天的低溫浸漬,以萃取最佳的色澤與風味。在長時間、緩慢的發酵過程後,酒液被轉入法國橡木桶中熟成,其中 20% 為新桶。隨後進行自然乳酸發酵,並熟成 8 個月,最後進行調配與裝瓶。
The source for our Pinot Noir fruit is from vineyards located in the cooler areas of Sonoma County, including the Russian River Valley & Bennett Valley. These areas experience a marine influence from the Pacific Ocean & San Pablo Bay as cool air, fog, & winds roll in at night during the summer, dropping temperatures substantially. This natural air-conditioning is ideal for Pinot Noir, allowing the grapes to develop deep flavors while retaining acidity. To capture the distinct varietal characteristics of each vineyard, the lots are fermented separately, starting with a 5-to-10-day cold soak to extract optimal color and flavor. After a long, slow fermentation, the wine is racked off into French oak barrels, which are 20% new oak. Then natural malolactic fermentation occurs, followed by aging for 8 months before blending & bottling.
